20-Minute Efo Riro

A rich, peppery classic — with the washing and chopping already done.

Efo riro is a weeknight meal when the greens arrive clean and chopped. Adding the spinach from frozen keeps it bright green and stops it overcooking.

Ingredients

  • 1 pack Frozen Chopped Spinach (Efo Tete)
  • 4 tbsp palm oil
  • 1 onion, sliced
  • 3 tbsp blended pepper mix
  • 2 tbsp ground crayfish
  • 1 tbsp iru (locust beans)
  • Assorted cooked meat or smoked fish
  • Seasoning and salt to taste

Method

  1. Step 1: Heat the palm oil and fry the onion and iru for two minutes.

  2. Step 2: Add the pepper mix and fry until the oil rises, about 8 minutes.

  3. Step 3: Stir in crayfish, meat or fish, and seasoning. Simmer for 5 minutes.

  4. Step 4: Add the spinach straight from frozen. Stir, cover and cook for 4 minutes. Serve with rice, yam or swallow.
